Best Ever Foolproof Pumpkin Bread Recipe

Best pumpkin bread ever - if I do say so myself...

Today, for a change, I'm not going to talk about shoes and dresses and jewelry - as you might have guessed from the title of this post. In the picture above you can see my famous pumpkin bread that I have been making for years now and I have never ever screwed it up, not even the first time I made it, so believe me when I say that it is absolutely foolproof. 


If you are a fan of the Starbucks pumpkin bread, you must try this recipe, because it is just as good, if not better! To be completely honest, it is not my recipe, I got it from Allrecipes and made some very small changes to it. 

Anyway, here it goes. In case you try it, let me know how it turned out!


Ingredients:

2 cups pumpkin puree (You can roast or boil the pumpkin and blend it with a stick blender. Use the leftover pumpkin for pumpkin cream soup or whatever. Don't use canned pumpkin, or anything else canned for that matter.)
4 eggs
1 cup olive oil (trust me, it will not be greasy)
2/3 (two thirds) cup water 
2 cups brown sugar
3.5 cups flour
1 package (16 g) of baking powder
1.5 teaspoon salt
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg 
1/2 teaspoon ground cloves
1/4 teaspoon ground ginger

1. In a large bowl mix pumpkin, eggs, oil, water and sugar with a stick blender.
2. In another bowl mix flour, baking powder, salt and spices.
3. Stir dry ingredients into wet and blend with a stick blender until lump free. Don't worry, it will rise.
4. Pour mixture in cake mold and bake in pre-heated oven for about 75 minutes at 175 C (350 F).

If you follow the instructions carefully, it will be the most moist and delicious cake you have ever made, I promise! You can add chocolate chips, chopped walnuts or anything else you like to make it more interesting, but I personally love it the way it is.

Oggi, invece di parlarvi di vestiti, scarpe o gioielli, volevo condividere con voi la mia ricetta preferita. Si tratta di un "pumpkin bread", ovvero pan di zucca. è un dolce che faccio ormai da anni e non sono mai riuscita a sbagliarlo, nemmeno la prima volta, quindi fidatevi se vi dico che è una ricetta infallibile.

Se siete come me amanti del pumpkin bread di Starbucks (una droga), dovete assolutamente provare questa ricetta, perchè è quasi meglio di quello! Va detto che non l'ho inventato io, ma l'ho preso da Allrecipes, cambiandolo leggerissimamente.

Ingredienti:

2 bicchieri di puré di zucca (Potete lessarla o arrostrirla in forno e poi metterla nel frullatore. Con la zucca rimanente potete fare ad esempio una zuppa crema.) 
4 uova
1 bicchiere di olio di oliva (non verrà unto, vi assicuro)
2/3 (due terzi) di bicchiere d'acqua
2 bicchieri di zucchero di canna
3.5 bicchieri di farina
1 bustina (16 g) di lievito per dolci
1.5 cucchiaino di sale
1 cucchiaino di cannella in polvere
1 cucchiaino di noce moscata in polvere (io la grattugio a mano)
0.5 cucchiano di chiodi di garofano in polvere
0.25 cucchiaino di zenzero in polvere

1. In una ciotola grande frullare la zucca con le uova, l'olio, l'acqua e lo zucchero.
2. In un'altra ciotola unire la farina, il lievito, il sale e le spezie.
3. Versare il mix con la farina nel mix con la zucca e frullare l'impasto con il blender finché non diventa omogeneo.
4. Versare in uno stampino per ciambellone e cuocere in forno preriscaldato a 175 gradi per circa 75 minuti.


Se seguite le instruzioni, vi prometto che sarà il dolce più buono che avete mai fatto! Potete aggiungerci dei pezzettini di cioccolato e delle noci tritate per renderlo più interessante, ma a me sinceramente piace così com'è. è perfetto per inzuppare nel caffellatte la mattina!
